While I woke up today, it was raining outside. The gloomy and slow start led to a craving for something warm and comforting, yet something new. From a regular Indian breakfast, I needed some change. You know the kind of breakfast that feels like a treat? Something cozy, and a little sweet. I had a couple of bananas and apples sitting in my kitchen. That’s when I decided—pancakes. Not just plain pancakes, but ones with a twist: bananas for their soft sweetness, cut apples for a little zing, and some chopped nuts for that lovely crunch.
Making pancakes is not a regular ritual at home. The smell of fresh fruits and sweet fragrance filled our house—it’s such a simple thing, but it quickly uplifted the mood. When I finally sat down with my warm stack of pancakes, topped with a drizzle of honey, I couldn’t help but smile. It was the perfect breakfast to brighten a grey, rainy day.
Ingredients:
- 1 apple (cut into small slices)
- 2 cups (60 ml) rolled oats
- 2 eggs
- 1 tablespoon cinnamon powder or a small piece of cinnamon
- 1 teaspoon baking soda
- 1 small cup of milk
- Butter or ghee (for cooking)
- Fresh fruits of choice (banana, strawberry, blueberry) & nuts
- Sugar/powdered sugar/honey/chocolate syrup (for topping)
Recipe:
- Cut an apple into small slices.
- Add 2 cups (60 ml) of rolled oats to a bowl.
- Add two eggs to this mixture.
- Add a tablespoon of cinnamon powder or a small piece of cinnamon.
- Add a teaspoon of baking soda.
- Pour a small cup of milk into the mixture.
- Blend the mixture into a smooth batter.
- Heat a pan and add butter or ghee to it.
- Pour a ladle of batter onto the heated pan and spread evenly.
- Cook on both sides until the color turns golden brown.
- Top the pancake with fresh fruits of your choice (banana, strawberry, blueberry), nuts, a teaspoon of sugar/powdered sugar, honey, or chocolate syrup.
