It’s been raining all day, and I just wanted something warm and comforting. Nothing fancy, just a bowl of creamy, homemade soup that feels like a warm hug. And that’s exactly what this pumpkin soup is—easy to make, rich in flavor, and perfect with some toasted bread on the side.

Pumpkin has this natural sweetness that blends beautifully with the warmth of garlic, pepper, and a little butter. And the best part? It’s smooth, creamy, and needs only a handful of ingredients.

Ingredients

  • 1 tbsp butter
  • 1 large onion, chopped
  • 4-5 cloves of garlic, minced
  • 1 tsp black pepper
  • ¼ yellow pumpkin, peeled and cut into pieces
  • A handful of cashews
  • ½ cup water
  • ½ cup milk or coconut milk
  • Toasted bread or roasted peanuts for garnish

Recipe

  • Melt a small slice of butter in a pan.
  • Sauté onions, garlic, and pepper until fragrant.
  • Add the pumpkin pieces and cashews. Sauté until the pumpkin softens.
  • Pour in half a cup of water and let the pumpkin cook well.
  • Let the mixture cool completely, then blend until smooth.
  • Add it back to the pan with a little butter.
  • Pour in the milk or coconut milk and let it boil for a few minutes.
  • Garnish with toasted bread or roasted peanuts and enjoy hot!
