I wanted to make something quick, simple, and healthy without spending too much time in the kitchen. That’s when this pasta salad came to the rescue! A handful of fresh veggies, a bit of seasoning, and some pasta to tie it all together—it couldn’t get any easier. It’s the kind of meal that feels light yet satisfying, perfect for days when you want to eat well but don’t feel like cooking anything elaborate.

The best part? You can throw in whatever you have at home. No strict rules. Skip the onions if you don’t like them, add extra bell peppers for crunch, or toss in some olives if you’re feeling fancy. It’s a simple mix of fresh veggies, pasta, and seasoning—lightly sautéed and topped with feta for that perfect balance of flavors.

Ingredients:

  • 1 cup pasta (penne, fusilli—whatever works)
  • 1 carrot, chopped
  • ½ cup broccoli florets
  • ¼ cup corn
  • ½ onion, finely chopped
  • 1 small tomato, diced
  • ½ green bell pepper, chopped
  • 1 tbsp olive oil
  • ½ tsp black pepper
  • ½ tsp oregano (or your favorite seasoning)
  • Salt to taste
  • Feta cheese for garnish

Recipe:

  • Boil the pasta as per the packet instructions. Drain and set aside.
  • Chop the veggies—carrots, broccoli, corn, onions, tomatoes, and green bell pepper.
  • Heat some olive oil in a pan and lightly sauté the veggies. Keep them crunchy!
  • Add black pepper, oregano, and salt—give it a quick toss.
  • Mix in the boiled pasta and stir everything together.
  • Top with feta cheese and it’s ready to eat!
